Blueberry Pancakes

INGREDIENTS:

  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons white sugar
  • 1 egg
  • 1 cup of milk
  • 1/2 tablespoon butter, melted
  • 1/2 cup frozen blueberries 


DIRECTIONS:

  • In a large bowl, sift together flour, salt, baking powder, and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries. Set aside for 1 hour. 
  • Heat a lightly oiled griddle or frying pan over medium/high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancaked. Brown on both sides and serve hot. 

This would be the perfect recipe to serve on Valentine's morning. My husband made this for him and I the other day and they were fabulous. I am not a huge fan of flavored pancakes, but these were amazing! I highly recommend trying this recipe out for your family or loved one.
